WHITE TUNA (BONITO DEL NORTE) IN OLIVE OIL

Every spring season the young tunas cross the Atlantic to reach Galicia and the Cantabrian Sea in search of the best anchovies and sardines.

There, one by one, they are captured by artisanal fishermen who use fishing rods and live bait. Their intense flavour comes from the ice cold waters where they feed and grow.

Valcárcel selects the best white tuna and prepares it with the care of tradition, preserving it in olive oil.
