COCKLES FROM THE GALICIAN ESTUARIES PRESERVED IN BRINE

In the finer sandy beaches of Galicia's Rias Baixas (Lower Estuaries) there are cockles which feed on the abundant plankton available in these extraordinary waters, that are so suitable for marine life.

They are hand-picked every year by female gatherers, on foot, during low tide and by sailors in small boats, with the aid of rakes.

Valcárcel selects them from an area of the Rias Baixas with special qualities for this species, the Noia estuary. They are prepared with the experience of generations, preserving them in brine, so that they transmit all the subtle aroma of the sea in their delicate and fragile meat.
