STUFFED SQUID (BABY SQUID) IN OLIVE OIL

When spring arrives, squids abandon the sea depths where they live in banks, to reach the surface, where they are captured.

We prepare this mollusc whose meat is tender and pleasant tasting in the traditional way. After cleaning it carefully, the body is turned inside out manually and filled with its own tentacles as part of a completely manual process, which culminates with the addition of olive oil that rounds off its flavour.
